Tons of Goodness Keto/Paleo Friendly Coconut Bites

Coconut Bites are crafted with unsweetened shredded coconut nestled within creamy coconut butter. They are raw, chewy, and slightly crunchy with a perfect hint of sweetness.

Ingredients

  • 1 tbsp extra virgin coconut oil
  • 1/4 cup coconut manna or coconut butter
  • 1/2 tsp organic vanilla bean extract
  • 2 tbsp coconut milk
  • 2 1/2 tbsp Vitafiber prebiotic dietary fiber
  • 1/2 cup finely shredded coconut
  • 1/2 cup medium shredded coconut

Instructions

  1. In a saucepan, combine coconut oil and coconut butter/manna and heat over low-medium heat until fully melted. Make sure your saucepan does not get too hot or your mixture may stick to your pan.

  2. Stir in vanilla extract, coconut milk, and Vitafiber.
  3. Stir in finely shredded coconut and medium shredded coconut. Stir until well combined. It helps to scrape the sides with a silicone spatula.
  4. Once mixed take the saucepan off the heat. Measure a tablespoon of the mixture into each of the silicone mold cavities. Alternatively, you could spread the mixture evenly into a small container or tray and then cut into bite-sized pieces later. I would recommend lining your container with parchment paper for easy removal.

  5. Freeze for 10 to 15 minutes until the fat bombs harden.

  6. Remove and store in an airtight container until ready to enjoy. They can be stored frozen or refrigerated depending on your preference.

Recipe Notes

We used a combination of medium shredded coconut and finely shredded coconut for these bites to reach the desired texture. Feel feel to try with just one type of shredded coconut, they will still taste amazing!

Coconut manna/butter is usually solid in the container. You can soften it by placing the jar in a bowl of hot water or by microwaving the jar without the lid in 30 second increments until softened.
