As I mentioned in my previous post, Keto Fat Bombs and Our Family Business, after hundreds of recipe attempts I developed three paleo and keto friendly fat bomb recipes that I loved and wanted to share. This post is all about Chocolate Chip Cookie Dough Bites.

Chocolate Chip Cookie Dough Bites are a pure blend of slightly sweet chewy almond cookie batter with a satisfying crunch from raw cocoa nibs. The cocoa nibs have a deep dark chocolate flavor and are packed with powerful nutrients, antioxidants, and fiber.

Cocoa Nibs

Cocoa nibs are bits of fermented, dried, roasted and crushed cacao bean. They add an intense chocolate flavor and a subtle crunch.  Cacao nibs have all the benefits of eating dark chocolate, without the added sugar. They are high in fiber, protein, and antioxidants. I add cocoa nibs to my smoothies for an extra boost of nutrition and chocolate flavor. They are also great added to homemade trail mix or granola. I usually use Viva Naturals in my recipes.

Almonds

Almonds are high in healthy monounsaturated fats, fiber, protein and various important nutrients. They are high in antioxidants that can protect your cells from oxidative damage.  Almonds are also extremely high in magnesium, a mineral that many people don’t get enough of.  For my recipes I use dry roasted almonds from Treehouse Almonds. They are a great farm-to-table source for almond products. I replace all-purpose flour with almond flour or coconut flour when baking and cooking.

Vitafiber IMO

VitaFiber IMO (isomaltooligosaccharide) is a natural, organic, plant-based prebiotic fiber sweetener. It is minimally processed and free of sugar, gluten, allergens, artificial colors and flavors, and preservatives. VitaFiber IMO is made from the root of tapioca, or cassava, plant. It is rich in dietary fiber and provides a good source of prebiotics to assist in healthy gut function.

I chose to use Vitafiber IMO due it’s health benefits. Many people, especially those following a ketogenic diet, lack fiber and prebiotics from plants in their diet. Coconut Oil

Coconut oil is high in healthy saturated fats that raise the good HDL cholesterol in your blood, which is linked to reduced heart disease risk. Coconut oil can also improve digestion, boost immunity against infections, and can be used for skin care and hair care. Tons of Goodness Chocolate Chip Cookie Dough Bites

Chocolate Chip Cookie Dough Bites are a pure blend of slightly sweet chewy almond cookie batter with a satisfying crunch from raw cocoa nibs. The cocoa nibs have a deep dark chocolate flavor and are packed with powerful nutrients, antioxidants, and fiber.

Ingredients

  • 1/4 cup organic virgin coconut oil
  • 1/4 cup Vitafiber
  • 2 tbsp almond butter
  • 2 tsp organic vanilla bean extract
  • 2 cups almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp cocoa nibs

Instructions

  1. In a saucepan, heat coconut oil over low heat until melted. Stir in Vitafiber, almond butter, and vanilla until well combined.

  2.  Stir in almond flour, baking soda, and salt.

  3. After ingredients are well mixed, stir in cocoa nibs.

  4. Remove your saucepan from the heat. Measure a tablespoon of the mixture into each of the silicone mold cavities. Alternatively, you could roll the mixture into balls and place them onto a wax-lined tray. 

  5. Freeze for 10 to 20 minutes until the fat bombs harden. Remove and store in an airtight container until ready to enjoy. They can be stored frozen or refrigerated depending on your preference. 

Recipe Notes

I love the taste and crunch of cocoa nibs in this recipe, however, if you would prefer you could replace them with low sugar or dairy free chocolate chips. Or you could make your own chocolate chips using my recipe for Easy Homemade Keto Dairy Free Chocolate
